 Happy February from Lange Girl Farms! As the days slowly lengthen in Southeast Michigan, we’re gearing up for one of our favorite late-winter rituals: maple tapping prep. With sugar maples on the land, we tap them each year for that pure, rich syrup straight from YAH’s provision. It’s a low-effort, high-reward project that teaches patience and perfect timing. Today, I’ll share our maple tapping prep checklist, essential tools, timing tips for our zone, and the simple sap-to-syrup process. Why Tap Sugar Maples on the Homestead?
 Tapping our own sugar maples is a sweet tradition.

Timing for Tapping in Southeast Michigan

  • Ideal window: Late February to early March (days above freezing, nights below).

  • Watch for sap flow when temps swing 32-45°F.

  • Stop when buds swell (sap turns bitter).

 Keep it simple—no fancy commercial setup needed.

  • Spiles/Taps: Food-grade plastic or metal (5/16” for small trees).

  • Buckets or Bags: Clean 5-gallon buckets with lids or collection bags.

  • Drill & Bit: Cordless drill with 5/16” bit.

  • Hammer: For gentle tapping.

  • Filters: Cheesecloth or wool for straining.

  • Evaporator: Outdoor fire pit or turkey fryer for boiling.

Step-by-Step Tapping Prep

  1. Identify Trees

    • Sugar maples 10”+ diameter—one tap per 10-20” trunk.

    • Healthy trees only.

  2. Clean Tools

    • Wash buckets, spiles with vinegar water.

  3. Drill Holes

    • 2-4 feet up, south side for more sun.

    • 1.5-2 inches deep, slight upward angle.

  4. Insert Spiles

    • Tap gently, hang bucket.

  5. Collect & Boil

    • 40:1 sap-to-syrup ratio—boil outdoors to avoid sticky house.

    • Finish indoors to 219°F for syrup.

  • Wild turkeys often visit during tapping—bonus wildlife watch.
